Albacore TunaAlbacore is caught primarily off the West Coast where the fish migrates to and from Japan. Meat is light pink and turns white when cooked. Tuna steaks are delicious grilled. Meat firms quickly when cooked. It should not be overcooked.

Cooking Method

Thaw all product under refrigeration for 10–12 hours. Remove plastic wrap.
Grill Four 6 oz tuna steaks, 1/2 cup cooking oil, 1/2 cup sesame seeds, 1/3 cup lemon juice, 3 tbs soy sauce, 1 tsp salt, 1 lg clove crushed garlic. Place fish in single layer in baking pan. Combine ingredients. Pour sauce over steaks and marinate for 30 minutes, Turning once. Remove steaks. Reserve sauce for basting. Place steaks in well greased hinged wire grill. Cook 4 inches over coals for about 8 minutes. Turn. Cook for 7–10 minutes or until fish flakes.
Broiled Four 6 oz steaks, 2 tbs melted margarine or oil, 2 tbs lemon juice, 1 tsp salt, 1/2 tsp paprika, dash pepper. Combine ingredients. Place steaks in well greased baking pan. Pour sauce over fish. Broil about 4 in. from flames for 4–6 minutes. Turn and baste with sauce. Broil 4–6 minutes longer or until fish flakes.
Spicy Sauce Can be used in either grilled, broiled, or baked recipes. 1/3 cup steak sauce, 1/4 cup ketchup, 1 tbs. hot sauce, 1/4 cup melted margarine or oil, 1 tbs vinegar, 1 tsp salt, 1/2 tsp curry powder. Combine ingredients and marinate steaks 30 minutes to baste.
