Red Brazilian Snapper (lutjanus purureus) are caught in the clear waters of the Caribbean and south to Brazil. The sweet white meat of the Brazilian Snapper is very similar to the American Red Snapper. Low in calories and fat. This fish can be broiled, baked, fried, poached or grilled. The fillets are sold skin on and boneless.
Cooking Method
| Thaw all product under refrigeration for 10–12 hours. Remove plastic wrap. |
| Broil |
Place fish in microwaveable tray. Brush with polyunsaturated oil or low fat sauce. Season to taste. Keep fish 4 inches from heat. Broil fillets 15 minutes or until fish flakes with a fork. |
| Bake |
Place fish fillets in a greased baking dish. Brush with oil. Squeeze lemon juice on fillets. Bake at moderate temperature (350°F.) until fish flakes easily with a fork. Serve. |
| Grill or BBQ |
Place fillets with skin side down on medium heat. Brush lightly with sauce. Cook for 7–8 minutes. Turn fillets and cook for additional 4–5 minutes.
