The gray sea trout is the most commercially valuable of the sea trouts. Gray sea trout range from 3–7 lbs and are also called weak fish, striped, or mexican trout. They are found in North America from the coast of Massachusetts to the East Coast of Florida and in South America from Southern Brazil to Argentina. Sea trout meat is lean, sweet and delicate. They can be grilled whole, pan fried, filleted or used in chowder.
Cooking Method

| Pan Fried |
Melt 1/2 lb butter or margarine in a large pan, wash trout fillets in salt water. Season with salt & pepper to taste. Dip into cool milk and sprinkle lightly with flour. Saute in butter about about 10 minutes or until brown, arrange on serving platter. brown butter left in pan and add 2 lemons cut into pieces and pour over fish. Serve. |
| Grilled |
3/4 cup melted butter or margarine, 2 lbs fish, 1 env onion soup mix, 1/4 tsp pepper, 1/3 lb sliced bacon. Rinse and dry fish. Combine ingredients, except bacon. Brush both sides of fish with sauce. Wrap each fish with slice of bacon. Place fish on well greased hinged wire grill. Cook about 6 inches away from moderately hot coals for 10–15 minutes. Baste with sauce. Turn. Cook another 5–10 minutes or until fish flakes easily with fork. |
| Baked |
Rinse and dry fish. Place fillets in well oiled baking pan. Brush with oil. Season with salt, pepper, and favorite spices. Bake in pre-heated oven at 350°F for about 15 minutes or until fish flakes easily with fork.
