WhitingWhiting (also called hake) are white fleshed ground fish found in abundance in the cold waters of both the Northern and Southern Hemispheres. Some species of hake/whiting are similar to cod in texture and taste, with a lean, white, mild tasting meat.

Cooking Method

Thaw all product under refrigeration for 10–12 hours.
Fried Mix 3/4 cup seasoned crumbs with 1/4 cup flour and 1 tbs season salt. Dip fillets into beaten egg then roll in crumbs. Turn until coated. Place in frying basket and lower in cooking oil preheated to 375°. Cook until crisp and brown. Remove fillets and drain on paper towels. Serve.
Poached Place fillets on well oiled foil. Squeeze 1/2 lemon on fillets. Season to taste. Seal foil. Place in baking pan in preheated oven at 400°. Bake for 15–20 minutes or until fillets flake when tested with a fork. Serve
Broiled Cajun Style

Place fillets in well oiled pan. Brush with oil. Sprinkle with coarse ground pepper. Add hot sauce to taste. Place in brouler 4 inches from flame 3–4 minutes. Turn. Sprinkle with coarse ground pepper. Cook 2–3 minutes or until meat flakes with fork.
