Baked Haddock
Ingredients: Directions:
  • 1 lb haddock fillets
  • 2-3 tbsp olive oil
  • 1 med onion, diced
  • 1 med green pepper, diced
  • 3 tbsp parsley chopped
  • 1 can diced tomatoes
  • 2 tsp cornstarch
  • 1/2 tsp salt
  • 1/2 tsp basil
  • pepper
  • lemon juice

Serves 4

  1. Preheat oven to 375 degrees.
  2. Saute onions, peppers and parsley in oil for 5 minutes or until soft.
  3. Add tomatoes with juice, do NOT drain. Stir in basil, cornstarch, salt and a pinch of pepper.
  4. Cook until sauce thickens.
  5. Pour half into a 9" square baking dish.
  6. Place the fillets in baking dish on top of sauce.
  7. Sprinkle with lemon juice, to taste.
  8. Top with remaining sauce and bake for 10 minutes or until done.
