- 1 lb haddock fillets
- 2-3 tbsp olive oil
- 1 med onion, diced
- 1 med green pepper, diced
- 3 tbsp parsley chopped
- 1 can diced tomatoes
- 2 tsp cornstarch
- 1/2 tsp salt
- 1/2 tsp basil
- pepper
- lemon juice

- Preheat oven to 375 degrees.
- Saute onions, peppers and parsley in oil for 5 minutes or until soft.
- Add tomatoes with juice, do NOT drain. Stir in basil,
cornstarch, salt and a pinch of pepper.
- Cook until sauce thickens.
- Pour half into a 9" square baking dish.
- Place the fillets in baking dish on top of sauce.
- Sprinkle with lemon juice, to taste.
- Top with remaining sauce and bake for 10 minutes or until done.
