- 4 Haddock fillets
- 100g Plain flour
- Salt
- White pepper
- 1 tbsp peanut oil
- 100ml Milk
- 100ml real ale beer
- 1 Egg white

- Preheat oil in deep fryer.
- Sieve the flour, a pinch of salt and pepper(to taste) in a bowl.
- Hollow out a spot in the middle and add the oil.
- Gradually hisk in the milk and beer until smooth and frothy.
- Let stand for 1 hour.
- In a small bowl, whisk the egg whites until thick.
- Fold eggs into the batter.
- Dust haddock fillets with flour. Dip in batter and deep fry until golden brown.
