Cajun Mahi Mahi
Ingredients: Directions:
  • 4–8oz Mahi Mahi
  • 1 tbsp cajun seasoning
  • 1/8 tsp cayenne pepper
  • salt
  • 1 cup finely chopped fruit (cantaloupe, grape, kiwi)
  • 1 tbsp balsamic vinegar
  • 1 tbsp brown sugar

Serves 4

  1. Preheat oven to 350 degrees.
  2. Sprinkle cajun seasoning and cayenne pepper on fish.
  3. In skillet, heat oil. Sear fish on both sides.
  4. Bake fish for 4-5 minutes or until completely done.
  5. Combine remaining ingredients in small bowl.
  6. Place each fillet on a plate and top with fruit salsa.
