Mango Mahi Mahi
Ingredients: Directions:
  • 1 ½ lb Mahi Mahi fillets
  • ¼ cup olive oil
  • ½ cup mango juice
  • ½ cup finely chopped fresh basil

Serves 4

  1. Cut fillets into serving sized portions and place on a plate.
  2. Mix together olive oil, mango juice and basil.
  3. Pour mixture over fish.
  4. Cover and refrigerate for 1 hour.
  5. Coat clean grill surface with oil. Preheat grill.
  6. Place fish on hot grill and cook for 5 to 6 minutes on each side. Make sure to baste before turning fish one time.
  7. Serve with grilled vegetables and green salad. Makes 4 Servings
