- 1 ½ lb Mahi Mahi fillets
- ¼ cup olive oil
- ½ cup mango juice
- ½ cup finely chopped fresh basil
Serves 4 |
- Cut fillets into serving sized portions and place on a plate.
- Mix together olive oil, mango juice and basil.
- Pour mixture over fish.
- Cover and refrigerate for 1 hour.
- Coat clean grill surface with oil. Preheat grill.
- Place fish on hot grill and cook for 5 to 6 minutes on each side. Make sure to baste before turning fish one time.
- Serve with grilled vegetables and green salad. Makes 4 Servings
