BBQ Sea Trout with Grapefruit-Ginger-Shallot Sauce
Ingredients: Directions:
  • 1 whole grapefruit
  • 1 cup fresh grapefruit juice
  • 1 tbsp shallots chopped fine
  • 1 tsp ginger, finely chopped
  • 2 tbsp sugar
  • Kosher salt
  • cayenne pepper
  • Pinch paprika
  • Juice of 1/2 lemon
  • 2 tbsp grated grapefruit zest
  • 2 tbsp vegetable oil
  • 4(6oz) sea trout filets
  • Kosher salt
  • freshly ground white pepper

Serves 4

  1. Peel whole grapefruit, cut into wedges and set aside.
  2. Mix together in a medium saucepan, grapefruit juice, shallots, ginger, sugar, salt, cayenne, and paprika.
  3. Simmer on medium-high until the mixture is reduced by half.
  4. Add salt, lemon, sugar, and cayenne to taste.
  5. Brush both sides of the fish with oil.
  6. Sprinkle with salt and pepper
  7. Grill 2-3 minutes per side or until done
  8. Add the grapefruit sections to the warm sauce.
  9. Spoon sauce onto four warm plates. Place a filet in the center of each and garnish with the zest.
