- 1 whole grapefruit
- 1 cup fresh grapefruit juice
- 1 tbsp shallots chopped fine
- 1 tsp ginger, finely chopped
- 2 tbsp sugar
- Kosher salt
- cayenne pepper
- Pinch paprika
- Juice of 1/2 lemon
- 2 tbsp grated grapefruit zest
- 2 tbsp vegetable oil
- 4(6oz) sea trout filets
- Kosher salt
- freshly ground white pepper
Serves 4 |
- Peel whole grapefruit, cut into wedges and set aside.
- Mix together in a medium saucepan, grapefruit juice, shallots,
ginger, sugar, salt, cayenne, and paprika.
- Simmer on medium-high until the mixture is reduced by half.
- Add salt, lemon, sugar, and cayenne to taste.
- Brush both sides of the fish with oil.
- Sprinkle with salt and pepper
- Grill 2-3 minutes per side or until done
- Add the grapefruit sections to the warm sauce.
- Spoon sauce onto four warm plates. Place a filet in the center
of each and garnish with the zest.
