- 2/3 cup cracker crumbs
- 1/3 cup ground almonds
- 3 tbsp chopped thyme, fresh
- 1/2 tsp pepper
- 2 lb trout fillets
- 1/2 cup milk
- 2/3 cup vegetable oil

- Combine crumbs, almonds, thyme and pepper.
- Dip fillets in milk and cover with crumb mixture.
- Heat oil in skillet.
- Fry fillets for 3 minutes on each side or until completely done and golden brown.
- Drain on paper towels and garnish as desired.
