- 1 1/4 lb red onion
- 3 tbsp lemon juice
- 1 tbsp minced ginger, fresh
- 1 - 1 1/2 lb whole tilapia
- 1 tbsp extra-virgin olive oil
- 2 lemons
- 3 tbsp minced cilantro, fresh

- Preheat oven to 400°.
- Slice onion thin and combine with lemon juice, and ginger in large bowl. Set 2 slices aside for stuffing.
- Spread mixture in bottom of a 9X13 baking dish.
- Rinse fish and pat dry. Brush with oil.
- Cut ends off lemon (about 1/2"). Slice the rest of the lemon very thin.
- Stuff the fish with the lemon ends, reserved onion and half the cilantro.
- Tuck the thin lemon slices around the fish.
- Bake until completely done. The thickest part should be opaque, but moist.
