Whole Tilapia with Onion and Lemon
Ingredients: Directions:
  • 1 1/4 lb red onion
  • 3 tbsp lemon juice
  • 1 tbsp minced ginger, fresh
  • 1 - 1 1/2 lb whole tilapia
  • 1 tbsp extra-virgin olive oil
  • 2 lemons
  • 3 tbsp minced cilantro, fresh

Serves 2

  1. Preheat oven to 400°.
  2. Slice onion thin and combine with lemon juice, and ginger in large bowl. Set 2 slices aside for stuffing.
  3. Spread mixture in bottom of a 9X13 baking dish.
  4. Rinse fish and pat dry. Brush with oil.
  5. Cut ends off lemon (about 1/2"). Slice the rest of the lemon very thin.
  6. Stuff the fish with the lemon ends, reserved onion and half the cilantro.
  7. Tuck the thin lemon slices around the fish.
  8. Bake until completely done. The thickest part should be opaque, but moist.
